About the Role
Pick n Pay Careers is looking for a skilled and results-oriented Manager Deli to lead deli operations and drive commercial success. This role requires a strong leader with expertise in fresh food production, financial performance, and customer experience, ensuring high-quality offerings and operational excellence.
Minimum Requirements
- Grade 12 (essential)
- Culinary qualification at Level 2 or a Hospitality and Catering Services qualification
- 3–5 years’ experience in a retail fresh food environment, preferably within Deli, Hot Kitchen, Cold Kitchen, or Ready-to-Eat departments
- At least 2 years in a supervisory or management role within food production or fresh retail operations
- Proven experience managing margins, waste control, and fresh food operations
- Strong knowledge of food safety regulations and merchandising principles

- Strong business and financial acumen, including margin management and cost control
- In-depth understanding of high-volume fresh food production planning
- Ability to balance operational discipline with product innovation
- Leadership capability with effective coaching and team development skills
- Analytical skills to interpret sales and performance data

Key Responsibilities
Commercial and Financial Performance
- Deliver sales, gross margin, and contribution targets through effective pricing, promotions, and product mix strategies
- Monitor daily trading performance, including sales, waste, shrinkage, and stock levels to protect profitability
- Align production volumes with sales forecasts and promotional cycles to minimise waste and maximise yield
- Identify and address margin risks through structured corrective actions
Production, Quality and Innovation
- Ensure strict adherence to recipes, portion control, and structured production planning for consistency and efficiency
- Maintain high standards of food quality, taste, and presentation
- Introduce seasonal and value-added products within approved guidelines to enhance competitiveness
- Ensure product freshness, availability, and effective stock rotation across all areas
Customer Experience and Merchandising
- Create an engaging deli environment through strong visual merchandising and food presentation
- Execute planograms and promotional displays to drive sales conversion
- Uphold excellent service standards with knowledgeable customer engagement
- Monitor customer feedback and adjust offerings to improve satisfaction and loyalty
Operational Excellence and Compliance
- Ensure compliance with food safety regulations, hygiene standards, and internal audit requirements
- Oversee temperature controls, food handling practices, and quality assurance processes
- Manage staff scheduling in line with productivity and sales demands
- Drive continuous improvement initiatives to enhance efficiency and operations
Leadership and Team Development
- Lead, coach, and develop the deli team to achieve operational and commercial objectives
- Build team capability in production planning, portion control, and customer service
- Foster a performance-driven culture focused on accountability, quality, and continuous improvement
Reporting and Controls
- Analyse sales, margin, waste, and stock reports to identify opportunities and risks
- Implement structured action plans supported by measurable KPIs
- Maintain accurate and compliant administrative and operational records in line with company standards
